A brief outage has no impact: screens reconnect on their own and the timer, anchored server-side, resumes exactly where it was. For a longer outage, the fix is the same as for your booking software or card terminal: a backup 4G router (~€30) takes over within seconds. In return, the cloud gives you zero installation, control from any device, and data backed up off-site.
